EAT · Alma Tierra

Farm Kitchen. Grown Here. Served with intention.

There is a different rhythm to food when it is grown a few steps from the kitchen.

Alma Tierra was born from the simple desire to cook what the land offers — nothing forced, nothing rushed. Just ingredients harvested from our finca, sourced from neighbors or friends we trust, and prepared with care over fire and flame.

This is farm kitchen cooking. Seasonal vegetables pulled from the soil that morning. Herbs cut fresh before service. Bread made slowly. Food that nourishes instead of overwhelms.

Soil. Fire. Table.

WHAT COMES TO THE TABLE

We cook intuitively, guided by what is ready and what is needed.

Breakfast — Fresh fruit with homemade yogurt and granola, followed by a complete plate: gallo pinto with tortillas, farm eggs, avocado and ripe plantain; or sourdough toast with avocado and eggs from our hens; or pancakes with fruit.
Lunch — Special, homemade food: lentils with vegetables and jasmine rice, a salad from the garden, meatballs, pasta, a traditional casado, or Caribbean chicken.
Dinner — We welcome you with bread we bake ourselves and butter, from the farm when we can. Then a soup of freshly harvested vegetables, a salad from the garden, and a main dish with its sides.

Tell us about any dietary needs when you book.

Always simple. Always intentional. Always from the land.

JOIN US AT THE TABLE
At Balsa Nueva, meals are not separate from the experience — they are part of it. After a sunrise over Golfo Dulce, after a walk through the forest, after the sound of rain on the roof — you sit, you eat, you breathe.
Open to lodge guests and outside visitors, by reservation.
Come hungry. Leave grounded.
